DI motors run lean at low throttle input. That's how they get good gas mileage. They are tuned about the same (maybe a little more lean) at high and wide open throttle as a regular port injected engine. The carbon buildup could be caused by how you drive, if you enjoy hitting the gas...who doesn't. Also, this is a turbo motor: there is going to be oil going into the engine. It's the nature of the beast. Oil leaks around the seals. Take off one of the intake hoses, after the turbo, and wipe your finger. It will be lined with oil. Yes it's normal.
